Holy cow! It’s 2014! My resolution is to be more diligent with updating my blog. It fell off a little bit there at the end of 2013, but I won’t let that trend continue this year! I’ve got a good number of restaurants that I need to write reviews for, AND I’m going to be hosting a special giveaway this week, so be on the look out!

The first quote of the week of 2014 comes from Anthony Bourdain and pretty much describes every meal I’ve had since 12/20/13. Did I mention my other resolution was to lose some weight & get healthier? Wish me luck!

I still haven’t gotten the hang of writing “/13” at the end of dates. Hopefully you guys have a better grasp on it than I do.

This is a quote for all of you out there who’ve already given up on your New Year’s Resolutions. Last year I was one of you! This year, I’m a bridesmaid in 3 weddings, so I don’t really have a choice but to stick to these stupid diets. For those of you still hanging in there, ignore this quote! Stay motivated!

Slow Cooker Southwestern Chicken Chili

Now that I’m working full time, the time that I have to spend cooking has diminished. I feel like I’m only home for ten minutes before it’s time for bed. Luckily for me, I got a Crockpot for Christmas, which is kind of like having a mini chef to do all of my cooking for me. Plus I have meals for multiple days at a time, which is awesome for my laziness.

Going along with my New Year’s Resolutions, I’ve been trying to cook healthier things for myself that are still delicious. I have a bunch of recipes saved that I’m excited to try, so look forward to those! My first one is a Southwestern 2 Bean Chicken dish that I adapted from a picture I found on Pinterest. I have a smaller crockpot and was trying to avoid corn, so I changed up the recipe a bit.

1 pkg chicken breast tenderloins from Costco (or 2 chicken breasts)
1 chicken-flavored bouillon cube (I use Knorr)
1 (15 ounce) can kidney beans (rinsed and drained)
1 (15 ounce) can black beans (rinsed and drained)
1 (15 ounce) can diced tomatoes in juice
1 (12 ounce) jar of your favorite salsa (I used Newman’s Own Medium)
1/2 Hass avocado, sliced


Place the chicken breasts on the bottom of your slow cooker. Pour the tomatoes over that and then layer on the beans and top with Salsa. Cook on low for 5-7 hours (mine cooked for about 8.5 hours and was perfect), or until the chicken easily falls apart when the pot is stirred. Serve and top with avocado.

The consistency kind of came out at a cross between a soup and chili. It reminds me a lot of the Chicken Chili from Five Loaves Cafe which is one of my favorite soups. Best of all, this recipe took me approximately 2 minutes to prepare, and most of that was opening cans. It cooked while I was at work, and when I got home, my apartment smelled AMAZING.

Took the week off last week to recover from 2 weeks of drinking and eating and being otherwise generally unhealthy, so sorry for there being no quote. This week marks my first official week as a full-time employee! Wooo! I love being a slave to the man, not going to lie… although I guess it helps that I have the coolest job ever.

Anywho, it’s January, so that means everyone is gearing up on their New Year’s Resolutions. Many of you (present company included) are probably hitting the gym, trying to work off those pounds you gained eating too many cookies and mashed potatoes over the holidays. I’m actually joining a gym after work tonight because DAMMIT I’m going to stick to it this time.
